Ingredients
  

For the Base

  • 1 lb chicken breast, sliced Chicken can be substituted with turkey breast or tofu.
  • 1 piece bell pepper, sliced Different colored bell peppers can be used.
  • 1 piece onion, sliced

For the Sauce

  • 2 tablespoons olive oil Can substitute with avocado oil.
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • to taste salt and pepper

To Serve

  • 4 pieces Tortillas for serving Whole wheat or corn tortillas for a healthier option.
  • Optional toppings: avocado, salsa, cheese, cilantro

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine chicken, bell pepper, onion, olive oil, chili powder, cumin, garlic powder, salt, and pepper. Mix well.
  • Spread the mixture evenly on a sheet pan in a single layer.

Cooking

  • Bake in the preheated oven for 20-25 minutes or until chicken is cooked through and vegetables are tender.

Serving

  • Remove from oven and serve with warm tortillas and your choice of toppings.

Notes

Ensure not to overcrowd the pan and opt for freshly ground spices for enhanced flavor. A squeeze of lime juice before serving is recommended to brighten the flavors.
