Preparation

  • Preheat your oven to 425°F (220°C) to ensure a nice, hot environment for roasting.
  • In a large bowl, combine broccoli florets and sliced carrots. Drizzle them with olive oil, then add minced garlic, salt, and pepper. Toss to coat well.

Roasting

  • Spread the vegetables in a single layer on a baking sheet.
  • Place the baking sheet in the preheated oven and roast for about 20-25 minutes, or until they are tender-crisp and slightly browned. Stir halfway through for even cooking.

Serving

  • Remove the vegetables from the oven and sprinkle with grated Parmesan cheese before serving.
