  • 30 oz frozen hash browns Fresh hash browns can be used with adjusted cooking time.
  • 2 cups shredded cheddar cheese Other cheeses like pepper jack or mozzarella can be used.
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper Feel free to mix in favorite veggies like spinach or mushrooms.
  • 12 large eggs Egg substitutes can be used.
  • 1 cup milk For a creamier texture, consider adding cream cheese.
  • to taste Salt and pepper

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, cook the sausage over medium heat until browned.
  • In a large bowl, mix the cooked sausage with the hash browns, cheddar cheese, onion, and bell pepper.
  • In another bowl, whisk together the eggs, milk, salt, and pepper.
  • Combine the egg mixture with the hash brown mixture and stir until well combined.
  • Pour the mixture into a greased 9x13 inch baking dish.

Baking

  • Bake for 45-55 minutes, or until the casserole is set and lightly browned on top.
  • Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days or freeze individual slices for up to 3 months. Serve warm, paired with fresh fruit or salad, and optional hot sauce or ketchup on the side.
