Pasta and Sauce Ingredients

  • 8 oz pasta (elbow or rotini)
  • 10 oz canned diced tomatoes with green chilies (like Rotel)
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese divided
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup beef broth

Preparation

  • Preheat oven to 350°F (175°C).
  • Cook the pasta according to package instructions until al dente. Drain and set aside.

Cooking

  • In a large skillet over medium heat, brown the ground beef with the onions, bell pepper, and garlic. Drain excess fat.
  • Add the can of diced tomatoes, beef broth, chili powder, salt, and pepper. Stir to combine.
  • Mix in the cooked pasta and half of the cheese.
  • Transfer everything to a greased casserole dish and top with the remaining cheese.
  • Bake for 20-25 minutes until the cheese is melted and bubbly. Serve warm.

Notes

Serve hot from the oven with optional toppings such as extra cheese, chopped green onions, or sour cream. Pairs well with a side salad or garlic bread. Store leftovers in an airtight container in the refrigerator for up to 3 days.
