  • Pepper, to taste

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash your zucchini thoroughly and slice them into even rounds, about 1/4 inch thick.
  • In a mixing bowl, toss the zucchini slices with olive oil, minced garlic, salt, pepper, and any other seasonings you prefer.
  • Spread the seasoned zucchini evenly on a baking sheet lined with parchment paper.

Cooking

  • Place the baking sheet in the preheated oven and roast for approximately 20-25 minutes, stirring halfway through for even cooking.
  • Check for doneness by piercing a slice with a fork; it should be tender but not mushy.

Notes

Cut the zucchini into uniform slices for even cooking. Don't overcrowd the baking sheet for proper roasting. Add cheese like parmesan in the last few minutes for extra flavor. Letting the zucchini rest after roasting can enhance flavor and texture.
