Ingredients
  

For the Base

  • 12 oz pasta (fusilli or rotini) You can use gluten-free pasta if you're following a gluten-free diet.
  • 1 cup cherry tomatoes, halved Red
  • 1 cup mozzarella balls White
  • 1 cup blueberries Blue
  • 1/4 cup red onion, diced
  • 1/4 cup fresh basil, chopped If fresh basil isn’t available, try using fresh parsley or mint.

For the Sauce

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • to taste salt and pepper Be generous to enhance flavors.

Preparation

  • Cook the pasta according to package instructions until al dente. Drain and set aside to cool.
  • In a large bowl, combine the cooled pasta, cherry tomatoes, mozzarella balls, blueberries, diced red onion, and chopped basil.
  • In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper until well blended.
  • Pour the dressing over the pasta salad and toss gently to combine all ingredients evenly.
  • Serve the salad chilled or at room temperature, allowing it to sit for 10-15 minutes after dressing for the flavors to meld.
