Ingredients
  

For the Cheesecake Filling

  • 1 pound fresh strawberries Wash and dry the strawberries carefully.
  • 8 ounces cream cheese, softened Use room temperature for easier mixing.
  • 1/2 cup powdered sugar Substitute with sugar alternative if desired.
  • 1 teaspoon vanilla extract
  • 1/2 cup whipped cream Use homemade or light whipped topping.

To Garnish

  • blueberries Fresh blueberries for topping.
  • raspberries Fresh raspberries for topping.

Preparation

  • Wash and dry the strawberries carefully. Cut off the tops and hollow out a small portion of the inside.

Making the Filling

  • In a mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Gently fold in the whipped cream until fully combined.

Assembly

  • Fill each hollowed strawberry with the cream cheese mixture using a piping bag or spoon.
  • Top each filled strawberry with blueberries and raspberries.

Serving

  • Serve immediately or refrigerate until ready to serve.

Notes

These strawberries can be prepared a few hours in advance and stored in the fridge. Best enjoyed fresh, within a few hours for optimal flavor.
