For the Sauce

  • 1/2 cup ranch dressing Use Greek yogurt ranch dressing for a lighter option.
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese Grated Pecorino Romano can be used for a sharper flavor.
  • to taste salt and pepper

To Serve

  • Skewers (wooden or metal) Soak wooden skewers in water for 30 minutes to prevent burning.
  • Fresh parsley for garnish (optional) Garnish is optional if time is short.

Preparation

  • In a bowl, combine the ranch dressing, minced garlic, grated Parmesan cheese, salt, and pepper. Stir until well mixed.
  • Add the cubed chicken to the marinade and mix well, ensuring each piece is covered. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.

Grilling

  • Preheat your grill to medium-high heat while the chicken marinates.
  • Once marinated, thread the chicken pieces onto skewers, leaving a little space between each piece.
  • Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the chicken is cooked through with nice grill marks.
  • Remove the skewers from the grill and garnish with fresh parsley, if desired. Serve hot.

Notes

A squeeze of fresh lemon juice just before serving brightens flavors. For maximum flavor, don't skip marinating time.
