  • 1 pound spaghetti
  • 1 pound chicken breast, diced Can substitute with skinless chicken thighs.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

For the Sauce

  • 2 cups chicken broth Can use homemade or low-sodium broth.
  • 1 can (14.5 oz) diced tomatoes Fire-roasted can be used for a smoky taste.
  • Salt and pepper to taste

To Serve

  • Parmesan cheese for serving Freshly grated is recommended.
  • Fresh basil for garnish (optional)

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the diced chicken and cook until it is browned on all sides, about 5-7 minutes.
  • Add the chopped onion and garlic to the pot. Sauté until the onion becomes translucent, about 3-4 minutes.
  • Stir in the chicken broth, diced tomatoes, and spaghetti ensuring it is fully submerged in liquid.
  • Bring the mixture to a boil, then reduce the heat and cover the pot. Cook for about 15 minutes, or until the spaghetti is cooked and the liquid is mostly absorbed.
  • Season with salt and pepper to taste. Serve topped with Parmesan cheese and fresh basil, if desired.

Notes

For added flavor, garnish with fresh herbs and serve with garlic bread or a simple green salad. Adjust cooking times as necessary to prevent overcooking the pasta.
