Ingredients
  

For the Chicken Mixture

  • 2 cups Shredded rotisserie chicken or canned chicken breast You can use leftover chicken or even turkey for a different flavor.
  • 2 tablespoons Mayonnaise Greek yogurt can be swapped for a healthier alternative.
  • 1 squeeze Lemon Adjust to taste for brightness.
  • 1 pinch Black pepper Enhances flavor.

For Serving

  • 2 slices Whole-grain bread Sourdough or ciabatta also works well.
  • 2 slices Provolone or Mozzarella cheese Try cheddar or gouda for a bolder taste.
  • 1 tablespoon Butter For toasting the bread.

Preparation

  • In a bowl, mix the shredded chicken with mayonnaise, lemon juice, and black pepper until well combined.
  • Spread the chicken mixture on a slice of whole-grain bread and top it with slices of cheese. Place another slice of bread on top.

Cooking

  • Heat a pan over medium heat and add a little butter.
  • Once melted, place the sandwich in the pan and cook until the bread is golden brown, about 3-4 minutes on each side.

Serving

  • Remove the sandwich from the pan, slice it in half, and serve warm.

Notes

Ensure your chicken is properly shredded for better texture. Toast the bread slowly to prevent burning. You can prepare the chicken mixture a few hours in advance and store it in the refrigerator. Leftovers can be kept in the fridge for up to 2 days.
