  • 1 loaf French bread Use stale bread for better texture.
  • 2 cups fresh blueberries Can swap for other fruits if preferred.
  • 6 large eggs
  • 2 cups milk Substitute with dairy-free milk for a dairy-free option.
  • 1/2 cup maple syrup Adjust to taste for sweetness.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon Add a pinch of nutmeg for extra flavor.
  • 1/4 teaspoon salt
  • Powdered sugar for serving Optional but adds sweetness.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
  • Cut the French bread into cubes and place half of the bread into the prepared baking dish.
  • Sprinkle half of the blueberries over the bread cubes.
  • In a bowl, whisk together the eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  • Pour half of the egg mixture over the bread and blueberries.
  • Add the remaining bread cubes and top with the rest of the blueberries.
  • Pour the remaining egg mixture over everything, pressing down lightly to soak the bread.
  • Allow to sit for about 15-20 minutes to absorb.

Baking

  • Bake in the preheated oven for 40-45 minutes, until the top is golden and puffed.
  • Let cool slightly before serving.

Notes

Can be prepared the night before and stored in the refrigerator. Reheat before serving. Pairs well with bacon or sausage and a glass of orange juice or coffee.
