Ingredients
  

For the Base

  • 1 cup all-purpose flour
  • 1/4 cup powdered sugar
  • 1/2 cup unsalted butter, softened

For the Sauce

  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/2 teaspoon baking powder

To Serve

  • to taste powdered sugar for dusting

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish.
  • In a mixing bowl, combine the flour and powdered sugar. Cut in the softened butter until the mixture is crumbly.
  • Press the crust mixture firmly into the bottom of the prepared baking dish. Bake for 15-20 minutes until lightly golden.
  • While the crust is baking, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and baking powder until smooth.
  • Once the crust is golden, remove it from the oven and pour the lemon mixture directly over it. Bake for another 20-25 minutes until set but still slightly wobbly in the center.
  • Allow the lemon bars to cool completely in the baking dish. Dust with powdered sugar and cut into squares.

Notes

For a finishing touch, consider adding lemon zest on top of the powdered sugar before serving. These bars are delightful with whipped cream or a scoop of vanilla ice cream.
