  • 1 tablespoon Lime juice Freshly squeezed is preferred.

To Serve

  • 1/4 cup Toasted coconut Add just before serving for crunch.

  • In a large bowl, combine the diced pineapple and kiwi. Gently mix to ensure even distribution.
  • In a small bowl, whisk together honey and lime juice until well-blended.
  • Pour the dressing over the fruit mixture and toss gently to coat all the pieces.
  • Top the salad with toasted coconut just before serving for an added crunch.
  • This salad is best enjoyed fresh, so serve it right away for optimal taste and texture.

Notes

Chill the salad for about 30 minutes in the refrigerator to let the flavors meld. Stir gently to prevent the fruits from breaking apart. Hold off on adding the toasted coconut until just before serving to maintain its crunch.
