  • 1 cup finely chopped dill pickles Drain if very wet to avoid sogginess.
  • 1/2 cup chopped tomatoes
  • 1/4 cup chopped onion
  • 1/4 cup chopped cilantro Fresh cilantro is best for flavor.
  • 1 each lime, juiced
  • Salt and pepper to taste

Preparation

  • In a mixing bowl, combine the chopped dill pickles, tomatoes, onion, and cilantro.
  • Squeeze lime juice over the mixture and season with salt and pepper.
  • Stir well to combine all ingredients.
  • Serve immediately on tacos or salads, or refrigerate for 30 minutes to let the flavors meld.

Notes

Store Pickle de Gallo in an airtight container in the fridge for up to 3 days. Stir before serving. Do not freeze, as the texture will change.
