  • 2 pounds potatoes (Yukon Gold or Russet) You can also use red potatoes or fingerlings.
  • 2 tablespoons olive oil Can be substituted with vegetable oil or melted butter.

  • to taste none Pepper Adjust according to personal preference.

Optional Herbs and Seasonings

  • 1 teaspoon garlic powder Optional for garlic flavor.
  • 1 teaspoon rosemary Optional for added aroma.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and cut the potatoes into evenly sized cubes, aiming for about 1-inch pieces.
  • In a large bowl, combine the potato cubes with olive oil, salt, pepper, and any optional herbs.
  • Spread the potatoes in a single layer on a baking sheet.

Cooking

  • Roast in the oven for about 25-30 minutes, flipping halfway through to ensure even browning.
  • If they're not browning enough, broil them for a few minutes at the end.
  • Remove from the oven and serve hot.

Notes

Drizzle with balsamic glaze or toss with melted butter for added flavor. Store leftover potatoes in an airtight container for up to 3 days. Reheat in the oven for best results.
