  • 1 cup butter (or vegan butter) Can use vegan butter for a vegan version.
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped Chop finely for even distribution.
  • 1/2 cup maple syrup (optional for vegan version) Add for extra sweetness.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the butter and brown sugar until smooth.
  • Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients until well combined.
  • Fold in the chopped pecans.
  • Drop spoonfuls of the dough onto a baking sheet.
  • If using, drizzle some maple syrup over each cookie before baking.
  • Bake for 10-12 minutes or until the edges are golden.
  • Let cool before serving.

Notes

Serve cookies warm or at room temperature. They pair well with coffee or tea. For longer storage, freeze for up to three months. Tips: Cream butter and sugar well, chop pecans finely, and don’t overbake.
