  • 1/2 cup granulated sugar

  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the peanut butter, brown sugar, and granulated sugar.
  • Add the egg, baking soda, salt, and vanilla extract; mix well.
  • Stir in the oats until fully combined.
  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for 10-12 minutes until the edges are golden.
  • Let cool before transferring to a wire rack.

Freezing

  • To freeze the dough, shape into balls and freeze on a baking sheet, then transfer to a freezer bag for later use.

Notes

For extra flavor, consider adding chocolate chips or chopped nuts. Don’t overbake as cookies continue to firm up as they cool. Store cookies in an airtight container at room temperature for up to a week or freeze for up to three months in a freezer-safe bag.
