Ingredients
  

For the Peach Filling

  • 4 cups fresh peaches, sliced Use ripe peaches for best flavor.
  • 1 cup sugar Adjust sugar if using sweet canned peaches.
  • 1 tablespoon lemon juice Adds brightness to the filling.

For the Batter

  • 1 cup all-purpose flour Can substitute whole wheat flour.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk Use coconut milk for a tropical flavor.
  • 1/2 cup butter, melted Use unsalted butter or dairy-free alternative.
  • 1 teaspoon vanilla extract

Preparation

  • In a large bowl, combine the sliced peaches with 1/2 cup of sugar and lemon juice. Stir gently.
  • In another bowl, mix together flour, baking powder, salt, and the remaining 1/2 cup of sugar.
  • Add milk, melted butter, and vanilla extract to the dry ingredients. Stir until just smooth.
  • Pour the batter into a greased baking dish, then spoon the peach mixture over the top.

Baking

  • Preheat the oven to 350°F (175°C).
  • Bake for 45-50 minutes until golden brown and bubbly.
  • Check doneness with a toothpick; it should come out clean.

Notes

Serve warm, preferably with vanilla ice cream or whipped cream. Store leftovers in the fridge for up to 3 days. Freezing is not recommended.
