Mocktail Base

  • 2 pieces ripe peaches sliced
  • 5 leaves fresh basil
  • 1 tbsp honey or agave syrup optional, adjust to taste
  • 1 tbsp fresh lemon or lime juice

To Serve

  • 240 ml sparkling water or soda water
  • 1 cup ice cubes
  • 2 slices peach for garnish
  • 2 leaves basil for garnish

  • Make the base: In a small bowl or glass, combine sliced peaches, basil leaves, and honey or agave if using. Gently mash with a spoon or muddler to release the juices and aromas.
  • Add citrus: Stir in the lemon or lime juice to brighten the mixture.
  • Prepare to serve: Fill two tall glasses with ice. Strain the peach-basil mixture into each glass, or pour directly for a more rustic feel.
  • Finish with sparkle: Top each glass with sparkling water or soda. Stir gently and garnish with peach slices and basil leaves.
