Ingredients
  

For the Base

  • 1 pound asparagus, trimmed Select thin or thick spears based on preference; both work well.
  • 4 cloves garlic, minced Use fresh garlic for robust flavor.
  • 2 tablespoons olive oil Feel free to use avocado oil for a different flavor profile.
  • to taste Salt and pepper Adjust seasoning according to preference.

For the Toppings

  • 1/4 cup shaved parmesan cheese Can substitute with pecorino for a sharper bite.
  • 1 cup cherry tomatoes, halved Grape tomatoes or bell peppers could also be used.
  • to drizzle Balsamic glaze Adds sweetness and depth.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, toss the trimmed asparagus with olive oil, minced garlic, salt, and pepper until well coated.
  • Arrange the asparagus in a single layer on a baking sheet.
  • Add the halved cherry tomatoes over the asparagus.

Roasting

  • Place the baking sheet in the oven and roast the asparagus for about 15 to 20 minutes, or until tender yet crisp.
  • Remove the baking sheet from the oven and sprinkle the shaved Parmesan cheese over the hot asparagus.
  • Drizzle with balsamic glaze right before serving.

Notes

You can prep the asparagus mixture a day ahead. Store in an airtight container in the fridge for 3-4 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
