  • 4 pieces chicken breasts Pound the breasts to even thickness for even cooking.
  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crunch.
  • 1/2 cup grated Parmesan cheese Mix lemon zest for a bright taste.
  • 2 pieces eggs Beaten for dipping the chicken.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt
  • to taste pepper

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a bowl, mix together breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  • In another bowl, beat the eggs.
  • Dip each chicken breast into the egg, then coat with the breadcrumb mixture.

Cooking

  • Heat olive oil in a large skillet over medium-high heat.
  • Sear each chicken breast for about 3-4 minutes on each side until golden brown.
  • Transfer the chicken to a baking dish and bake for 15-20 minutes, or until cooked through.
  • Serve hot.

Notes

Cool the chicken to room temperature before storing. Store in an airtight container in the fridge for up to 3 days. Reheat in the oven at 350°F (175°C) until hot to maintain the crisp crust. Can freeze cooked chicken for up to 2 months; wrap well and thaw in the fridge before reheating.
