Ingredients
  

For the Base

  • 1.5 pounds ground chicken
  • 1 cup breadcrumbs (plain or Italian style)
  • 0.5 cup grated Parmesan cheese
  • 1 large egg
  • 0.5 cup milk
  • 3 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 2 tablespoons fresh parsley (chopped or 1 teaspoon dried)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

For the Toppings

  • 1 cup shredded mozzarella cheese
  • 0.5 cup marinara sauce

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lightly grease a 9×5-inch loaf pan or line it with parchment paper.
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, egg, milk, minced garlic, chopped onion, parsley, Italian seasoning, salt, and black pepper. Mix gently until just combined.
  • Transfer the mixture into the prepared loaf pan and shape it into an even loaf.

Baking

  • Place the loaf pan in the preheated oven and bake for 40–45 minutes, or until nearly cooked through.
  • Spread marinara sauce over the top and sprinkle with shredded mozzarella cheese if desired. Bake for an additional 10–15 minutes, or until the internal temperature reaches 165°F (74°C).

Serving

  • Let the meatloaf rest for 5–10 minutes before slicing. Garnish with extra parsley and Parmesan cheese, if desired.

Notes

You can make a few swaps based on dietary needs, like using ground turkey instead of chicken or whole wheat/gluten-free breadcrumbs. For extra flavor, try adding bell peppers or mushrooms to the mixture.
