Instructions
 

Preparation

  • In a bowl, mix the flour, baking powder, sugar, and salt together.
  • In another bowl, whisk together the milk, egg, and melted butter until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; a few lumps are okay.
  • Heat a non-stick skillet over medium heat. Pour a small amount of batter to form a pancake about 5 inches in diameter.

Cooking

  • Cook until bubbles appear on the surface, then flip and cook until golden brown on the other side. Repeat with the remaining batter.
  • Once all pancakes are cooked, fold each pancake in half to create a taco shape.

Serving

  • Fill the tacos with assorted fruit and your choice of creamy filling. Serve immediately and enjoy!
