Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 375°F (190°C) and grease a mini muffin pan.
  • In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, mix the milk, egg, melted butter, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Fill each muffin cup about 2/3 full with the batter.

Baking

  • Bake for about 10-12 minutes, or until golden brown and a toothpick comes out clean.
  • Allow to cool slightly before removing from the pan.

Serving

  • Serve warm with your choice of toppings.

Notes

Make sure not to over-mix the batter to keep the poppers fluffy. You can also add mini chocolate chips or fruit pieces to the batter for a fun twist. Keep an eye on them while baking, as ovens can vary in temperature. If you have leftovers, store them in an airtight container at room temperature for up to two days or refrigerate for up to a week. They can be frozen for up to a month.
