  • 1 lb Smoked sausage
  • 4 medium Potatoes Any variety, such as red or Yukon gold
  • 2 medium Bell peppers Any color
  • 1 medium Onion
  • 1 tbsp Smoked paprika
  • 2 cloves Garlic Minced
  • 1 tbsp Thyme Fresh or dried
  • 1 cup White cheddar cheese Shredded
  • 2 tbsp Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Cut the smoked sausage into bite-sized pieces and chop the potatoes, bell peppers, and onions.
  • In a large bowl, combine the sausage, potatoes, bell peppers, and onions.
  • Drizzle with olive oil and sprinkle with smoked paprika, garlic, thyme, salt, and black pepper.
  • Toss everything together until evenly coated.
  • Spread the mixture in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the potatoes are tender and the sausage is browned.
  • Remove from the oven and sprinkle the melted white cheddar cheese on top.
  • Return to the oven for an additional 5 minutes until the cheese is bubbly.
  • Serve hot and enjoy!

Notes

This dish pairs well with a simple green salad or crusty bread. For extra flavor, try adding different herbs, such as rosemary or oregano. Leftovers can be stored in an airtight container for up to 3 days in the fridge or frozen for up to a month.
