Ingredients

For the Potatoes

  • 2 pounds red potatoes Tender red potatoes that roast well.
  • 3 tablespoons olive oil Can be swapped for melted butter or avocado oil.
  • 1 teaspoon garlic powder Fresh minced garlic can be used for a stronger flavor.
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • to taste Fresh herbs (optional for garnish) Experiment with dried herbs like rosemary or thyme.

Instructions

Preparation

  • Preheat your oven to 425°F (220°C). This high temperature ensures that the potatoes roast perfectly, achieving that desired crispiness.
  • Wash and cut the red potatoes into halves or quarters, depending on their size. This ensures even cooking and proper crisping.
  • In a large bowl, toss the potatoes with olive oil, garlic powder, paprika, salt, and pepper until well coated. Ensure every piece gets a good amount of seasoning.
  • Spread the potatoes in a single layer on a baking sheet. Avoid overcrowding the pan to allow proper airflow, which helps them crisp.

Cooking

  • Roast in the preheated oven for 25-30 minutes, flipping halfway through for even browning, until they are crispy and golden brown.
  • Remove from the oven and garnish with fresh herbs if desired. Serve warm to enjoy their amazing flavor.

Notes

Cut potatoes uniformly for even cooking. Flip the potatoes halfway through roasting for maximum crispiness. Use parchment paper on the baking sheet for easier cleanup. Roast at high temperatures for a golden finish. Season liberally, as roasting can sometimes diminish tastes.
