Ingredients
  

For the Base

  • 2 pieces chicken breasts, diced
  • 8 oz pasta (such as penne or rotini)
  • 2 cups chicken broth

For the Sauce

  • 1 cup heavy cream Can substitute with Greek yogurt for a lighter version.
  • 1/2 cup Caesar dressing Consider a healthier option if desired.
  • 1 cup parmesan cheese, grated Nutritional yeast can be used for a vegan alternative.

To Serve

  • 2 cups romaine lettuce, chopped
  • Salt and pepper to taste
  • Olive oil for cooking
  • Croutons for garnish (optional)

Preparation

  • Heat a drizzle of olive oil over medium heat in a large skillet.
  • Add the diced chicken and cook until browned and cooked through, about 5-7 minutes.
  • Stir in the pasta and chicken broth, bringing it to a boil.
  • Reduce heat and let simmer until the pasta is al dente, about 10-12 minutes. Stir occasionally.
  • Once the pasta is cooked, stir in the heavy cream and Caesar dressing until well combined.
  • Add the parmesan cheese and season with salt and pepper. Mix until melted and incorporated.
  • Stir in the chopped romaine lettuce until slightly wilted.
  • Serve hot, topped with croutons if desired.

Notes

Diced chicken and chopped lettuce can be prepped ahead to save time. Store in the fridge for up to 3 days. Reheat gently with a splash of chicken broth.
