  • 2 cups orzo pasta You can substitute with other small pasta shapes like ditalini or quinoa for a gluten-free option.
  • 2 cups chicken broth

For the Sauce

  • 1 cup heavy cream Light cream or whole milk can replace heavy cream if you're watching your fat intake.
  • 1 cup Parmesan cheese, grated If Parmesan isn’t available, any hard cheese like Pecorino Romano will work well.
  • 2 tablespoons Cajun seasoning If you don’t have Cajun seasoning, a mix of paprika, garlic powder, cayenne pepper, and dried herbs can create a similar effect.
  • 2 tablespoons olive oil

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced chicken, seasoning with salt, pepper, and Cajun seasoning. Cook until browned, about 5-7 minutes.
  • Once the chicken is browned, stir in the orzo. Let it cook for about a minute, ensuring it’s well mixed with the chicken and oil.
  • Add the chicken broth to the pot and bring to a boil.
  • Reduce the heat and let it simmer uncovered, typically around 10-12 minutes, until the orzo is tender. Stir occasionally to prevent sticking.
  • Once the orzo is cooked, stir in the heavy cream and grated Parmesan cheese. Mix until you achieve a creamy consistency.
  • Taste for seasoning and adjust with salt and pepper if needed. Garnish with chopped parsley before serving hot.

Notes

Best enjoyed fresh, but leftovers can be stored in an airtight container for up to 4 days. To reheat, add a splash of chicken broth or cream to revive creaminess.
