Ingredients
  

Pasta and Shrimp

  • 8 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined Use fresh shrimp for best flavor.

Sauce Ingredients

  • 2 tbsp olive oil
  • 2 cloves garlic, minced Adjust the amount based on taste preferences.
  • 1 cup heavy cream Can substitute with coconut cream for a dairy-free version.
  • 1 cup grated Parmesan cheese Can substitute with nutritional yeast for a dairy-free version.
  • Salt and pepper to taste Use to season as desired.

Garnish

  • Fresh parsley Use for garnish before serving.

Preparation

  • In a large pan, heat olive oil over medium heat.
  • Add minced garlic and sauté for 1 minute until fragrant.
  • Add shrimp and cook until pink, about 3-4 minutes.
  • Add fettuccine and heavy cream, stirring to combine.
  • Cook until the pasta is al dente and the sauce thickens, about 10 minutes, stirring occasionally.
  • Stir in the Parmesan cheese until melted.
  • Season with salt and pepper to taste.
  • Garnish with fresh parsley before serving.

Notes

Serve hot, directly from the pan. Pair with a side salad or garlic bread. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. Reheat adding a little extra cream or water if necessary.
