  • 4 chicken thighs
  • 4 chicken drumsticks
  • 4 large potatoes, diced

For the Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

To Serve

  • Fresh herbs (like rosemary or thyme) for garnish

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the chicken thighs, drumsticks, and diced potatoes.
  • Pour in the olive oil, garlic powder, paprika, salt, and pepper. Toss to coat evenly.
  • Spread the chicken and potatoes in a single layer on a baking sheet.

Cooking

  • Roast in the preheated oven for about 40-45 minutes, stirring halfway through.
  • Ensure the chicken reaches an internal temperature of 165°F (74°C) to be fully cooked.

Serving

  • Garnish with fresh herbs before serving.

Notes

You can marinate the chicken and potatoes in the seasoning a few hours ahead of cooking for deeper flavors. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven or microwave.
