  • 3 large bananas Or 4 small bananas, very ripe for best flavor.
  • 1/2 cup unsalted butter Melted.
  • 2/3 cup granulated sugar You can reduce the sugar if desired.
  • 2 large eggs At room temperature.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can be replaced with gluten-free blend.
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C), grease a 9x5 inch loaf pan, and set it aside.
  • In a large mixing bowl, mash 3 large (or 4 small) overripe bananas with a fork or potato masher.
  • Add 1/2 cup melted butter and whisk until combined.
  • Stir in 2/3 cup sugar, 2 eggs, and 1 teaspoon vanilla extract, then whisk again.
  • Add dry ingredients: 2 cups all-purpose flour, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Using a spatula, fold until just combined.
  • Pour the batter into the pre-greased loaf pan.

Baking

  • Bake at 350°F for about 60 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and let cool for about 5-10 minutes before transferring to a wire rack to cool completely.

Notes

You can serve the banana bread warm or at room temperature. Add butter or a sprinkle of cinnamon sugar on top for extra flavor. For longer storage, wrap in plastic wrap or aluminum foil and keep in an airtight container.
