Ingredients
  

For the Salad Base

  • 2 pounds potatoes, cubed You can use red or yellow potatoes for creaminess.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, chopped
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese.
  • 1/4 cup black olives, sliced Use green olives for a different flavor.

For the Dressing

  • 1/4 cup olive oil Use good quality for best flavor.
  • 2 tablespoons red wine vinegar Swap with lemon juice for a brighter flavor.
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

Preparation

  • Start by boiling the cubed potatoes in salted water until they are tender, which takes about 15-20 minutes.
  • Once tender, drain the potatoes and let them cool completely.
  • In a large bowl, gently mix the cooled potatoes with cherry tomatoes, cucumber, red onion, feta cheese, and black olives.

Dressing

  • In a separate bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.

Combining

  • Pour the dressing over the salad and toss gently to combine.
  • Chill in the refrigerator for at least 30 minutes before serving to enhance the flavors.

Notes

Chill the salad for longer (up to 2 hours) for even better flavor integration. Adjust salt and pepper to your taste before serving.
