Ingredients
  

For the Base

  • 4 pieces boneless, skinless chicken breasts Substitute chicken thighs if preferred.
  • to taste Salt and pepper
  • 2 tablespoons olive oil

For the Sauce

  • 4 cloves garlic, minced
  • 1 cup chicken broth Homemade enhances flavor.
  • 1 cup heavy cream Use half-and-half for a lighter version.
  • 1/2 cup sun-dried tomatoes, chopped Fresh tomatoes can be used as a substitute.
  • 2 cups fresh spinach Kale can be used as an alternative.
  • 1 teaspoon Italian seasoning
  • to taste Grated Parmesan cheese Optional.

To Serve

  • to taste Fresh basil for garnish Optional.

Preparation

  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for about 6-7 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.

Making the Sauce

  • In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
  • Pour in chicken broth and bring it to a simmer. Stir in heavy cream, chopped sun-dried tomatoes, and Italian seasoning. Allow to simmer for 3-4 minutes until slightly thickened.

Combining Ingredients

  • Stir in the fresh spinach and then return the seared chicken breasts to the skillet. Simmer for an additional 5-7 minutes until the chicken is cooked through.

Serving

  • Garnish with fresh basil and sprinkle with Parmesan cheese, if desired.

Notes

Ensure your skillet is hot enough before adding the chicken for a perfect sear. Taste for seasoning; adjust as necessary.
