Main ingredients

  • 4 pieces boneless, skinless chicken breasts (about 1 lb), cut into bite-sized pieces
  • 3 cups fresh broccoli florets
  • 4 cloves garlic, minced
  • 1 thumb-sized piece ginger, minced
  • 1/4 cup low-sodium soy sauce
  • 2 tsp olive oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil
  • to taste red chili flakes (optional)
  • 1 cup low-sodium chicken broth
  • 1 tsp sugar or honey

Preparation

  • Prep all ingredients: chop chicken, wash broccoli, and mince garlic and ginger.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (5-7 minutes).
  • Add garlic and ginger; sauté until fragrant (1-2 minutes).
  • Toss in broccoli and add the soy sauce-cornstarch mixture. Cook until broccoli brightens (3-4 minutes).
  • Pour in chicken broth and sugar; simmer until the sauce thickens slightly.
  • Drizzle sesame oil over the stir fry before serving.

Notes

Serve hot over brown rice or quinoa. You can add extra veggies like bell peppers or snap peas. Garnish with sesame seeds or green onions. Store leftovers in an airtight container in the refrigerator for 2-3 days.
