  • 4 pieces chicken breasts, boneless skinless
  • 1 cup bread crumbs
  • 1 cup grated Parmesan cheese Divided into two portions
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Preparation

  • Preheat your oven to 375°F.
  • In one dish, mix together the breadcrumbs, half of the grated Parmesan cheese, Italian seasoning, salt, and pepper.
  • In a second dish, beat the eggs and milk together.
  • Place the flour in a third dish.
  • Take each chicken breast and dredge it first in flour, then dip it into the egg mixture, and finally coat it in the breadcrumb mixture.

Cooking

  • Heat olive oil in a skillet over medium heat. Cook the chicken for 3-4 minutes on each side, or until golden brown.
  • Transfer the browned chicken to a baking dish.
  • In a small bowl, mix the remaining Parmesan cheese with shredded mozzarella cheese and minced garlic. Top the chicken with this mixture.
  • Bake in the oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly.

Notes

Serve with a side of pasta, steamed vegetables, or a fresh salad. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze tightly wrapped for up to 2 months. Reheat in the oven to maintain crispiness.
