  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon juiced
  • Salt and pepper to taste
  • Red pepper flakes (optional) Optional for added spice

Cooking

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the minced garlic and sauté until fragrant, about 1 minute.
  • Add the asparagus and cook for 3-5 minutes, until bright green and tender-crisp.
  • Push the asparagus to one side and add the shrimp to the skillet.
  • Season with salt, pepper, and red pepper flakes, if using.
  • Cook the shrimp for 2-3 minutes on each side, until they are pink and opaque.
  • Squeeze fresh lemon juice over the shrimp and asparagus.
  • Toss everything together and serve immediately.

Notes

Serve hot with rice, quinoa, or a light salad. Garnish with lemon slices or fresh parsley. Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat gently to avoid overcooking the shrimp.
