Ingredients
  

For the Base

  • 4 pieces Salmon fillets (6 oz each) Use trout or cod as a substitute if unavailable.
  • 1.5 lbs Baby potatoes, halved For lower-carb version, consider sweet potatoes or cauliflower.
  • 1 lb Broccoli florets Can be substituted with asparagus or green beans.

For the Sauce

  • 1/4 cup Unsalted butter Can be replaced with olive oil or a vegan butter substitute.
  • 2 tablespoons Fresh lemon juice Fresh is recommended for better flavor.
  • 2 cloves Garlic, minced Fresh garlic adds more flavor than powder.
  • to taste Salt and pepper Adjust according to taste.
  • 1 teaspoon Lemon zest (optional) Adds a brighter lemon flavor.

To Serve

  • 1 piece Lemon slices For garnish.
  • a handful Fresh parsley, chopped For garnish and added flavor.
  • 3 tablespoons Olive oil (divided) Use for coating potatoes and drizzling.
  • 1 teaspoon Garlic powder For seasoning potatoes.
  • 1 teaspoon Paprika For seasoning potatoes.
  • to taste Salt and pepper Adjust according to taste.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Make sure it is fully preheated.
  • In a mixing bowl, toss the halved baby potatoes with olive oil, garlic powder, paprika, salt, and pepper.

Cooking

  • Spread the seasoned potatoes on a baking sheet in a single layer and bake for about 20 minutes, or until they begin to brown.
  • In a small saucepan, melt the butter over medium heat. Add minced garlic and lemon juice, stirring until fragrant. Stir in lemon zest if using.
  • After 20 minutes, push the potatoes to the side on the baking sheet and place the salmon fillets skin-side down. Add the broccoli florets around the salmon and drizzle with the lemon butter sauce.
  • Return the baking sheet to the oven and bake for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serving

  • Garnish with fresh lemon slices and chopped parsley before serving. Enjoy your meal!

Notes

Prep the sauce and season the potatoes a day in advance. Store them separately in the fridge. Leftovers can be stored in an airtight container for up to 3 days.
