Ingredients
  

For the filling

  • 1 lb ground beef Can substitute with shredded chicken or turkey.
  • 1 cup cream cheese Use full-fat for best results.
  • 1 cup shredded cheddar cheese Can mix with other cheeses for extra flavor.
  • 1 cup sliced bell peppers Any color can be used.
  • 1 cup sliced onions
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Low-carb wraps or zucchini slices Zucchini slices can be used instead of wraps for lower carbs.

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C).
  • In a skillet, heat olive oil over medium heat. Add sliced onions, bell peppers, and garlic; cook until softened.
  • Add ground beef to the skillet; season with salt and pepper. Cook until browned.
  • Stir in cream cheese and cheddar cheese until melted and combined.

Assembly

  • Place the beef and cheese mixture onto low-carb wraps or zucchini slices, roll them up, and place on a baking sheet.

Cooking

  • Bake in the preheated oven for 15-20 minutes or until the rolls are golden and heated through.

Notes

These rolls are best served warm right out of the oven. Pair with a side salad or low-carb dipping sauce. If any leftovers, store in an airtight container in the fridge for up to three days or freeze for later use.
