Preparation

  • Cook the pasta according to package instructions. Drain and let cool.
  • In a large bowl, combine the cooked pasta, corn, red bell pepper, red onion, cherry tomatoes, and cilantro.

Dressing

  • In a small bowl, whisk together olive oil, lime juice, salt, and pepper.

Assembly

  • Pour the dressing over the pasta salad and toss to combine.
  • Sprinkle crumbled feta cheese over the top before serving.
  • Chill in the refrigerator for at least 30 minutes before serving for best flavor.

Notes
