Ingredients
  

For the Chicken

  • 2 pieces chicken breasts Skin-on chicken can be used for additional flavor.
  • Salt and pepper To taste

For the Marinade

  • 2 pieces limes, juiced
  • 2 tablespoons olive oil Can substitute with avocado oil.
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin

To Serve

  • 2 pieces ripe avocados Slice just before grilling.
  • 1 cup cherry tomatoes, halved
  • Fresh cilantro For garnish

Preparation

  • In a bowl, mix lime juice, olive oil, garlic powder, cumin, salt, and pepper to create the marinade.
  • Place chicken breasts in a resealable bag, pour the marinade over them, and let marinate in the fridge for at least 30 minutes.

Grilling

  • Preheat the grill to medium-high heat.
  • Remove chicken from marinade and grill for about 6-7 minutes per side until fully cooked.
  • Slice avocados and place them cut side down on the grill for a few minutes to char towards the end of cooking.

Serving

  • In a serving dish, add sliced grilled chicken, top with halved cherry tomatoes, and charred avocados. Garnish with fresh cilantro before serving.

Notes

Marinating chicken longer enhances flavor significantly. Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F (75°C).
