  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup marinara sauce For mixing in
  • 1 piece egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • additional marinara sauce for topping
  • to taste Crispy breadcrumbs for topping

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, egg, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
  • Shape the mixture into a loaf and place it in a baking dish.
  • Spread marinara sauce over the top of the meatloaf.
  • Sprinkle crispy breadcrumbs on top for added crunch.

Baking

  • Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  • Let it rest for a few minutes before slicing and serving.

Notes

Mix the meatloaf well but don’t over-mix to keep it tender. Feel free to adjust garlic and Italian seasoning to suit your taste. For added moisture, mix in some sautéed vegetables like onions or bell peppers. Use a meat thermometer to check for doneness.
