Ingredients
  

For the Base

  • 1 lb chicken (cut into 1-inch bite-sized cubes) You can substitute cooked rotisserie chicken for a quicker option.
  • 2.5 tbsp Cajun seasoning Don’t skimp on the seasoning for maximum flavor.
  • 1.5 tbsp olive oil Used for cooking the chicken.
  • 6 cups lettuce (chopped into 1/2-inch ribbons) Try using spinach or mixed greens for a different base.
  • 1/2 cup basil, roughly chopped Fresh herbs enhance flavor.
  • 1/3 cup cilantro, roughly chopped
  • 2 cups cherry tomatoes (halved lengthwise) Add bell peppers or cucumbers for extra crunch.
  • 1 cup blue cheese (crumbled into small chunks) Swap for feta or goat cheese for a milder flavor.
  • 8 strips bacon (cooked until very crispy) Turkey bacon can be a healthier alternative.
  • 1 large avocado (sliced) Add just before serving to enhance freshness.
  • 4 eggs hard-boiled and sliced into quarters Ensure they are perfectly cooked.
  • 2 tbsp toasted sunflower seeds Toast in a dry pan for extra flavor.

For the Sauce

  • 1/4 cup sour cream Use Greek yogurt for a lighter dressing.
  • 1/4 cup mayo
  • 1 tbsp lemon juice (freshly squeezed)
  • 1.5 tsp garlic powder
  • 1/2 tsp honey
  • 1/3 cup cilantro (for the dressing)
  • 3 tbsp chives
  • 2 tbsp dill
  • Sea salt and cracked black pepper to taste

Preparation

  • Start by preparing all your components while the chicken cooks. Hard-boil the eggs if not already done, then let them cool and slice into quarters.
  • Cook the bacon until very crispy, then chop or break into bite-sized pieces.
  • Chop your lettuce into 1/2-inch ribbons and roughly chop the basil and cilantro.
  • Halve the cherry tomatoes lengthwise, crumble the blue cheese into small chunks, slice the avocado, and toast the sunflower seeds in a dry pan over medium heat for 2-3 minutes until fragrant.

Cook the Chicken

  • Pat the chicken cubes dry with paper towels to ensure better browning.
  • In a bowl, combine the Cajun seasoning, sea salt, and cracked black pepper, then toss the chicken pieces thoroughly to coat evenly.
  • Heat the olive oil in a large skillet over medium-high heat until shimmering, then add the seasoned chicken and cook for 10-12 minutes, stirring halfway through, until golden brown on the outside and cooked through.

Prepare the Dressing

  • While the chicken cooks, combine the sour cream, mayo, lemon juice, garlic powder, honey, chives, dill, and 1/3 cup cilantro in a blender or food processor.
  • Blend until smooth and creamy, about 1-2 minutes. Taste and adjust seasoning with salt and pepper as needed.
  • If the dressing is too thick, add a little more lemon juice or water, one tablespoon at a time, until you reach your desired consistency.

Assemble the Salad

  • Place the chopped lettuce in a large bowl or on a platter.
  • Drizzle half of the creamy herb dressing over the lettuce and gently toss to coat evenly.

Add Toppings

  • Arrange the cooked chicken, hard-boiled eggs, crispy bacon, blue cheese, halved tomatoes, sliced avocado, and toasted sunflower seeds in rows or sections on top of the dressed lettuce.
  • Drizzle the remaining half of the dressing over the arranged salad or serve it on the side.
  • Toss gently just before eating to combine all components while keeping them somewhat distinct. Serve immediately while the chicken is still warm and the avocado is at its best.

Notes

Use fresh herbs for enhanced flavor. For a vibrant presentation, alternate the layers of colors when plating. Consider drizzling a little balsamic glaze on top before serving for an added touch. A sprinkle of freshly cracked pepper just before serving can add a delightful kick. Garnish with additional herbs to enhance the visual appeal.
