Ingredients
  

For the Base

  • 1 lb chicken, cut into 1-inch bite-sized cubes For quicker preparation, use rotisserie chicken.
  • 2.5 tbsp cajun seasoning Use for seasoning the chicken.
  • 1.5 tbsp olive oil For cooking the chicken.
  • 0.5 tsp sea salt
  • 0.25 tsp cracked black pepper
  • 6 cups lettuce, chopped into 1/2-inch ribbons Can substitute with mixed greens or spinach.
  • 2 cups cherry tomatoes, halved lengthwise Use a variety for better presentation.
  • 1 large avocado, sliced

For the Sauce

  • 0.25 cup sour cream Can be substituted with a vegan option.
  • 0.25 cup mayo Use a light or vegan option if desired.
  • 1 tbsp lemon juice, freshly squeezed For added freshness.
  • 0.33 cup cilantro
  • 3 tbsp chives
  • 2 tbsp dill
  • 1.5 tsp garlic powder
  • 0.5 tsp honey
  • Salt and pepper to taste

To Serve

  • 1 cup blue cheese, crumbled into small chunks Can substitute with feta or goat cheese.
  • 8 strips bacon, cooked until very crispy Turkey bacon can be used for lower fat.
  • 4 eggs hard-boiled and sliced into quarters
  • 2 tbsp toasted sunflower seeds Watch them closely while toasting.

Preparation

  • Prepare all components while the chicken cooks. Hard-boil the eggs if not already done, then let them cool and slice into quarters. Cook the bacon until very crispy, then chop into bite-sized pieces.

Cooking Chicken

  • Pat the chicken cubes dry with paper towels for better browning. In a bowl, combine the cajun seasoning, sea salt, and cracked black pepper, then toss the chicken thoroughly to coat evenly. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 10-12 minutes, stirring halfway through, until golden brown.

Making the Dressing

  • While the chicken cooks, combine sour cream, mayo, lemon juice, garlic powder, honey, chives, dill, and cilantro in a blender. Blend until smooth and creamy. Adjust seasoning with salt and pepper. If too thick, add more lemon juice or water to reach desired consistency.

Assembling the Salad

  • In a large bowl or on a platter, place the chopped lettuce. Drizzle half of the creamy herb dressing over the lettuce and gently toss to coat evenly. Arrange chicken, hard-boiled eggs, crispy bacon, blue cheese, halved tomatoes, sliced avocado, and toasted sunflower seeds in rows or sections on top of the dressed lettuce.

Serving

  • Drizzle the remaining half of the dressing over the arranged salad or serve it on the side. Toss gently just before eating to combine all components while keeping them distinct.

Notes

Consider adding a sprinkle of fresh herbs before serving for a bright finish. Use a variety of colored tomatoes for a beautiful presentation.
