Ingredients
  

Grains and Legumes

  • 1 cup quinoa, rinsed Rinsing removes bitterness.
  • 2 cups vegetable broth Can substitute with chicken broth.
  • 1 can black beans (15 oz), rinsed and drained Canned beans for convenience.

Vegetables

  • 1 cup diced vegetables (bell peppers, carrots, zucchini) Use your choice of vegetables.

Seasonings

  • 1 teaspoon ground cumin Enhances flavor.
  • to taste salt
  • to taste pepper

Fats

  • 1 tablespoon olive oil For sautéing vegetables.

Toppings (optional)

  • avocado Sliced.
  • cilantro Chopped.
  • lime wedges
  • salsa To taste.

Instructions
 

Preparation

  • Rinse the quinoa under cold water to remove any bitterness. Chop your chosen vegetables into bite-sized pieces.

Cooking

  • Activate the Instant Pot and choose the sauté function. Add the olive oil and let it heat for about a minute. Add the diced vegetables and sauté for 3-4 minutes until they start to soften.
  • Stir in the rinsed quinoa, vegetable broth, black beans, cumin, salt, and pepper. Mix everything well to combine.
  • Close the lid of the Instant Pot, ensuring the valve is set to sealing. Select the pressure cook function and set the timer for 1 minute on high pressure.
  • After the cooking time is complete, allow the pressure to decrease naturally for 10 minutes. After the 10 minutes, carefully switch the valve to venting to release any remaining pressure.
  • Open the lid and fluff the quinoa mixture with a fork. Serve warm, topped with your favorite toppings.
