For the Sauce

  • 2 pieces Tomatoes Fresh tomatoes can be replaced with canned diced tomatoes or a homemade salsa.
  • 1 pieces Onion
  • 1/4 cup Cilantro Cut just before serving to keep it fresh.
  • to taste Hot sauce Adjust based on heat tolerance.

To Serve

  • 1 pieces Avocado, sliced Use ripe avocados for the best flavor.
  • to taste Salt Adjust seasoning as needed.
  • to taste Pepper Adjust seasoning as needed.

Preparation

  • Heat the corn tortillas in a skillet over medium heat until warm, about 1 minute per side.
  • In another pan, heat the black beans over medium heat until heated through. Season with a pinch of salt and pepper.
  • Fry the eggs in the same skillet to your desired doneness—sunny-side-up or over-easy.
  • Sauté the chopped onions and diced tomatoes in the same skillet until softened, about 3–4 minutes.

Assembly

  • On a plate, place a warm tortilla, add a portion of black beans, and top with a fried egg.
  • Drizzle with hot sauce, garnish with chopped cilantro and sliced avocado, and season with salt and pepper to taste.
