  • 2 pieces chicken breasts For a leaner option, you can use boneless, skinless thighs.
  • to taste Salt and pepper Ensure even seasoning for balanced flavor.

For the Sauce

  • 1/2 cup hot honey If you prefer less heat, use regular honey with a pinch of red pepper flakes.

For the Base

  • 1 cup cooked rice or quinoa Feel free to swap for cauliflower rice for a low-carb option.

To Serve

  • 1 cup mixed greens Any salad greens like spinach, arugula, or kale can work.
  • 1/2 cup sliced cucumbers
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup feta cheese (optional) Leave it out for dairy-free or use crumbled vegan cheese.

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts generously with salt and pepper on both sides.

Cooking

  • Place the chicken breasts on a baking sheet and bake for approximately 20-25 minutes, or until fully cooked.
  • While the chicken bakes, pour the hot honey into a small saucepan and warm it over low heat.
  • Once baked, drizzle the heated hot honey generously over the chicken.

Assembly

  • Start with a base of cooked rice or quinoa, topped with mixed greens, sliced cucumbers, and halved cherry tomatoes.
  • Slice the chicken breasts and arrange them on top of the salad.
  • Sprinkle feta cheese on top for a salty contrast, if desired.

Notes

Leftovers are delicious; store chicken in an airtight container for up to 4 days. For added zest, include a lemon wedge when serving.
