  • 4 pieces chicken thighs (bone-in or boneless)
  • 1/4 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 tablespoon rice vinegar (optional)

Preparation

  • In a bowl, mix honey, soy sauce, minced garlic, olive oil, and rice vinegar. Stir well to combine.
  • Place the chicken thighs in a baking dish and pour the marinade over them. Make sure the chicken is well coated.
  • Cover the dish with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to overnight for more flavor).
  • Preheat the oven to 400°F (200°C).

Cooking

  • Remove the chicken from the marinade and place it on a baking sheet. Reserve the marinade for later.
  • Bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  • Meanwhile, pour the reserved marinade into a small saucepan and bring it to a boil. Let it simmer for about 5 minutes to thicken.
  • Once the chicken is done, brush it with the thickened marinade before serving.

Notes

For extra flavor, let the chicken marinate for a longer time—up to 8 hours or overnight. If you prefer a crispy skin, broil the chicken for a few minutes at the end of baking. Adjust the sweetness or saltiness by adding more honey or soy sauce to the marinade according to your taste. Store any leftovers in an airtight container in the refrigerator for about 3-4 days or freeze for up to 3 months.
