  • 1/4 cup mustard Preferably yellow mustard

Rice Ingredients

  • 1 cup rice Any variety, cooked in chicken broth
  • 2 cups chicken broth Enhances flavor

Preparation

  • In a bowl, mix honey and mustard together.
  • Season the chicken breasts with salt and pepper.

Cooking

  • Heat olive oil in a pan over medium heat.
  • Add the chicken and cook until browned on both sides.
  • Pour the honey-mustard mixture over the chicken and allow it to simmer for about 10-15 minutes, until the chicken is cooked through.
  • Meanwhile, cook the rice according to package instructions using chicken broth instead of water for more flavor.

Serving

  • Serve the chicken on a bed of rice and garnish with chopped parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat as needed, adding chicken broth if rice is dry. For added flavor, marinate the chicken in the honey-mustard mixture before cooking.
