  • 2 cans cans of sweet corn (drained) Drain well to avoid excess moisture.
  • 1 cup cornmeal
  • 1 cup milk For a richer flavor, consider using cream instead.
  • 1/2 cup honey Add more honey for a sweeter dish.
  • 2 large eggs
  • 1/2 cup melted butter
  • 1 tsp baking powder
  • to taste Salt and pepper

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the sweet corn, cornmeal, milk, honey, eggs, melted butter, baking powder, salt, and pepper.
  • Mix until well combined.
  • Pour the mixture into a greased baking dish.
  • Bake for 30-35 minutes or until the top is golden and a toothpick inserted comes out clean.
  • Let cool slightly before serving.

Notes

Serve warm with roasted meats. Drizzle extra honey on top or sprinkle fresh herbs for added flair. Store leftovers in the refrigerator for up to 3 days, reheating before serving.
