Ingredients
  

For the Casserole

  • 1 can whole kernel corn, drained
  • 1 can cream-style corn
  • 1 box corn muffin mix (8.5 oz)
  • 1 cup sour cream
  • ½ cup melted butter
  • 2 large eggs
  • 3 tbsp honey (divided)
  • ½ tsp salt

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch dish.
  • In a bowl, mix the muffin mix, both types of corn, sour cream, melted butter, eggs, salt, and 2 tablespoons of honey.

Baking

  • Pour the mixture into the greased dish and bake for 45–50 minutes until golden and set.
  • Drizzle the remaining honey on top in the last 5 minutes of baking.

Serving

  • Allow the casserole to rest for 5–10 minutes before serving.

Notes

For an extra sweet touch, increase the amount of honey. For a denser casserole, reduce sour cream slightly. Mix in cheese or spices for added flavor. Store leftovers in an airtight container for 3 to 4 days.
